Recipe - Stuffed Marrow
Mmm, Marrow! How exciting! Or maybe not...

We received marrow in our organic vegetable delivery recently, and I created this recipe based on what we had spare in the cupboards.

Ingredients
  • Large marrow
  • Broccoli (or other green veg)
  • Garlic - 3 or 4 cloves
  • Rice
  • Brie
Method
Cook some rice in vegetable stock, made quite strong to impart flavour. I didn't measure the amount but a cupful will probably be enough - decide how much you will need to fill the marrow!

Halve the marrow longwise and scoop out the seeds. Then scoop out the flesh in ribbons, until you have a half inch of flesh in the shell.

Fry the flesh in some tomato puree, so that the marrow flesh absorbs the flavour. If you don't like tomato, try frying it in garlic oil or some other flavour that you do like, or just leave it plain.

After a minute, add your broccoli or green veg, cut small, and continue frying for a short time until they are sealed but not burnt. Add the garlic cloves, peeled and halved.

Remove from heat, and mix with the cooked rice.

Now stuff the mixture into your marrow shells, then cut small cubes of brie, and dot them along each shell, buried slightly in the mixture so they will melt into it.

Place the shells in a baking dish, and bake in a hot oven (200C) for 20 minutes.

You could serve it as it is, or topped with a range of things such as fried onions, chilli sauce or mayonnaise, depending on your taste.
