Recipe - Flash's Fried Bananas
Ingredients
- 1 banana per person
- Demerara sugar
- Cinnamon
- Liqueur
- Knob of butter
Method
Slice the bananas longways, and then in half so they are in quarters. Fry face down in a knob of butter for a minute (not too long, it is easy to overcook and hard to undercook!)Sprinkle sugar over the top of the bananas, and add a pinch of cinnamon. Be generous with the quantity used - too much is ok.
Turn the bananas so that the sugar begins to bubble in the pan. Add a shot or two of liqueur (Cointreau or Grand Marnier is ideal), take the pan off the heat and touch a match to it so that it flambes! (Don't panic if it doesn't but it will taste better that way.)
Cook for another few seconds only, then serve, spooning the liquid from the pan over the bananas.
